Basque-inspired Tapas, shared plates, and desserts. Our culinary classic is the Annex Burger, made with bacon jam, and cheddar cheese. Our story is one of perseverance and evolution. When we opened the Tinderbox Kitchen in 2009, people thought we were crazy. The Southside neighborhood of Downtown Flagstaff was known for its rough past, but we saw potential in this community. To our surprise, we quickly became a local favorite and were even turning people away on busy nights. Instead of feeling satisfied, we saw this as a chance to grow. We decided to expand and create the Annex Cocktail Lounge next door. Our goal was to provide a comfortable space for our guests to relax and enjoy a drink while waiting for their table at the Tinderbox. Little did we know that the Annex would take on a life of its own. In 2013, Nick Williams joined our team and transformed the Annex into the best Cocktail Lounge in the state. His dedication to creating the perfect cocktail won him "Cocktail of the Year" in 2018 from Restaurant Hospitality magazine. Today, Nick is one of the owners of THAT Place Projects Hospitality group, which includes Tourist Home, Annex, and Tinderbox. Our cocktails have never been better, and we are excited to announce a new addition to our menu. In honor of the upcoming Centennial Anniversary of the Basque Handball court, built by Jesus Garcia and his family of sheep herders, we are celebrating the rich culinary traditions of the Basque people. The Basque people emigrated from Spain to the Southwestern United States in search of opportunity and gold, bringing with them their unique traditions and flavors. Our chef, Mike Schmitz, and his team have crafted a menu that honors the Basque culture through the use of authentic ingredients, spices, and presentation. We are thrilled to share this rich history with our guests and invite you to experience it with us on our magnificent outdoor patio. And let's not forget about our famous Annex Burger! It features a juicy 7 oz beef patty topped with delicious bacon jam, melty cheddar cheese, and our very own house pickles. But what really sets this burger apart is our secret sauce that will leave your taste buds dancing with delight. Served with a side of crispy fries and our homemade catsup, the Annex Burger is a must-try for any burger lover.
